Lomito Saltado (Peruvian stir fry)


Ingredients

1 Tbs of chopped fresh garlic

1 Tbs of finely chopped ginger

1/2 Tbs of roasted cumin or just cumin

2 Tbs of aji panca or Aji Limo - puree

2 lbs of sirloin ( cut in small pieces -1/2" x 1/2 " x 1" - aprox. Does not need to be exact -cut off the tough tendons?

1 lb. of red tomatoes - the fresher the better - cut in quarters

1 lb. of red onions cut small quarters

3 aji amarillos (Peruvian yellow chiles) in long strips

6 Tbs of Soy sauce

Red wine vinegar

Salt and pepper

1/2 bunch of cilantro

1 lb of french steak fries

Olive oil for sautéing

Instructions

Add salt to meat in a bowl, add a bit of soya sauce and let rest for 1 - 2 h.

Start cooking the French fries in the oven. Meanwhile add oil to the frying pan or wok and heated to medium heat, add garlic and ginger until start browning, add aji panca or aji limo, add the meat and increase heat to high sauté meat until brown. Add cumin. Remove meat into a bowl. Add a bit more oil, add onions and cook to the point onions start cooking but still firm - approx 1 minute - add salt an pepper then add vinegar and continue until the vinegar is evaporated. Remove onions from the pan or wok, add a bit more of oil heat it up and add tomatoes, salt a paper and sauté until start softening, add aji amarillo, the meat, french fries, add soya sauce adjust taste add cilantro sauté and serve immediately. You can serve this with rice or mostly any side you like for example with eggs for brunch or in a sandwich for a quick lunch.

The trick of this dish is to sauté at very high fire to the point to see the fire coming our the pan when you are tossing the ingredients and to do this is in small batches almost plate per plate to provide the smokiness of chiles in a really hot frying pan.
